The quality of protein is based on their amino acid composition, especially the content and availability essential acids. Cereals are important sources for human nutrition, but limited in amounts acids, notably lysine. aim this study was to analyze chemical composition profiles different cereals that nutritional purposes diet. protein, moisture crude fat varied significantly from 7.83 13.22%, 11.45 13.80%, 1.67 6.35%, respectively. obtained results showed oat had highest contents (13.22%), (6.35%) cellulose (9.42%) compared other cereals. Significant (p < 0.05) variation existed nonessential acids among samples with level wheat. Essential accounted one-third total tested Glutamic found be most abundant acid.
